With tailgating season upon us, bring on the tasty munchies!  While I am not necessarily a game watching fan, I am definitely a fun food fan! I especially love coming up with bite-sized finger foods that are a bit healthier yet super tasty (like these Jalapeno Popper Quinoa Bites)  With this in mind, I wanted to come up with a fun recipe combining another tailgating favorite, buffalo chicken.  As always, it was a natural transition to come up with Buffalo Chicken Quinoa Bites.

Buffalo Aioli | An easy recipe for aioli with a buffalo sauce twist!

Buffalo Aioli #SundaySupper

Buffalo Aioli takes a basic aioli recipe and transforms it into something extraordinary…buffalo style!  A bowl, a whisk, a few simple ingredients, and 5 minutes are all you need to make this easy recipe.

Buffalo Aioli | An easy recipe for buffalo aioli

Aioli is one of those accompaniments that I always enjoy at restaurants. It puts an upscale twist on the simplest sandwiches, burgers, vegetables and has the ability to turn a simple plate of fries into frites!  For whatever reason, it never occurred to me how easy aioli is to make at home.  Then one night, we were making oven fries, and I wanted to do something to dress them up. I had an egg yolk leftover from another recipe, we are crazy for anything buffalo, and from there it was a natural progression to become Buffalo Aioli!

Avocado Buffalo Chicken Wraps are a spicy buffalo chicken salad packed with lots of vegetables and made with avocado and Greek yogurt instead of mayo.  Enjoyed warm or chilled, this wrap is healthy, quick and easy ~ perfect for a weeknight!

Avocado Buffalo Chicken Wraps | alidaskitchen.com #recipes #SundaySupper #WeekdaySupper

Avocado Buffalo Chicken Wraps put a fun and unique twist on your everyday chicken salad.  Shredded chicken, drenched in a light, seasoned buffalo sauce, spices things up, while an avocado and Greek yogurt mixture replaces the mayo.  For the vegetables, I used shredded carrots and chopped broccoli (I’m not a fan of celery, but if you are, some chopped celery would be a tasty addition as well).   A little blue cheese crumble would be an excellent topping as well.

Buffalo Chicken Lasagna Cups | alidaskitchen.com #SundaySupper

After making the Spinach Lasagna Cups recipe for last Sunday, I had another tasty idea pop into my head that I had to make right away – Buffalo Chicken Lasagna Cups.  I don’t typically like to share similar recipes back-to-back, but these were so good, they simply could not wait.

Buffalo Chicken Lasagna Cups are made with layers of cheese, veggies, spicy, buffalo-sauce soaked shredded chicken and more cheese.  In other words, they combine some of the most delicious game day foods (or any day foods, duh!)  into a  wonderful, bite-sized lasagna. The concept is the same as the Spinach Lasagna Cups, with lasagna-style layering, using wonton wrappers in place of noodles.   They are quick and easy to make, and bake up in a snap!…

This Buffalo Chicken Quinoa Salad is darn near perfection.  We start with warm, shredded chicken tossed in a lighter buffalo sauce; add sautéed vegetables and combine it with the ever trendy (and tasty!) quinoa.  Sprinkle blue cheese (or cheddar) on top, as desired, and you’re looking at a delicious and healthy Buffalo Chicken Quinoa Salad.

Not only is this salad am-a-zing, but it can be made in under 30 minutes!  The quinoa and chicken cook simultaneously, allowing plenty of time to prepare and sauté the vegetables and whisk together the sauce.  Put it all together and dinner is served!  (Leftovers make great lunches too)

Buffalo Chicken Quinoa Salad

Yields: 3 to 4 servings
Ingredients
  • 1 cup quinoa, rinsed
  • 2 cups vegetable broth (or water)
  • 2 boneless, skinless chicken breasts (about 8 to 10 ounces) OR 2 cups shredded rotisserie chicken
  • 1 cup shredded carrots
  • 1 cup broccoli florets
  • 2 to 3 green onions chopped, whites and greens separated
  • Cooking spray
  • ½ cup hot sauce (I recommend Frank's hot sauce)
  • ¼ cup extra virgin olive oil
  • 1 tablespoon lemon juice
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • ¼ teaspoon onion powder
  • ¼ teaspoon salt
  • Optional toppings: blue cheese crumbles or shredded cheddar cheese
Instructions
  1. Make quinoa: In a medium sauce pan, put rinsed quinoa and vegetable broth and bring to a boil. Cover and reduce heat to a simmer for 15 to 20 minutes. Let sit for 5 minutes and then fluff quinoa with a fork.
  2. Poach chicken: While the quinoa is cooking, place chicken in medium pot, and add enough water to cover chicken. Bring to a boil, cover and reduce to a simmer; cook for 5 minutes. Remove pan from heat and let chicken stand, covered until cooked through (about 12 to 14 minutes). Remove chicken from liquid and shred with 2 forks.
  3. While quinoa and chicken are cooking, sauté the vegetables. Spray a nonstick skillet with cooking spray and heat over medium high heat. Add broccoli, carrots and the whites of green onions, and sauté for 5 minutes, or until desired crisp-tenderness. Set aside.
  4. Make the sauce: Whisk together hot sauce, oil, lemon juice, garlic powder, paprika, onion powder and salt.
  5. Pour ¼ cup sauce over shredded chicken, tossing to coat.
  6. To a large bowl, add quinoa, chicken and vegetables, tossing to combine (You can add remaining sauce with this step OR drizzle as desired over each individual serving).
  7. Sprinkle with remaining chopped green onion and serve.

I drew inspiration from this recipe and my Baked Buffalo Chicken Tenders recipe.

Baked Buffalo Chicken Tenders

healthy baked buffalo chicken breast tenders
Baked Buffalo Chicken Tenders are made with simple pantry ingredients, and because they are so delicious and easy, they have become a fixture in our dinner rotation.  The seasoned flour gives an interesting boost of flavor to these otherwise basic baked chicken tenders.  It also is a nice complement to the hot and spicy buffalo sauce.  While either buttermilk or egg whites work great for moistening the chicken before breading, I tend to prefer the tang from the buttermilk.  The buffalo sauce makes a modest amount to contribute the spicy  buffalo flavor without excess, thus making it a bit lighter.  The result is a spicy buffalo baked chicken dish that is as delicious as it is easy.  The recipe also halves easily, making a simple dinner for 2.  I enjoy my buffalo chicken plain, but it is also delicious served with your favorite side of blue cheese dressing for dipping.

Baked Buffalo Chicken Tenders

Yields: 4 servings
Ingredients
  • 2 tablespoons all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ½ cup buttermilk OR 2 egg whites, lightly beaten
  • 1 cup panko breadcrumbs
  • 1 pound chicken tenders OR boneless, skinless chicken breasts, cut into strips
  • Cooking spray
  • ½ cup hot sauce
  • 1 tablespoon butter, melted
Instructions
  1. Preheat oven to 400 degrees. Line a rimmed baking sheet with foil and spray with cooking spray. Place a wire rack on rimmed baking sheet (optional). Set aside.
  2. In a shallow bowl, combine flour, garlic powder, paprika, onion powder and salt.
  3. Put buttermilk (or egg whites) and breadcrumbs, each in separate shallow bowls.
  4. Working with one tender at a time, dredge chicken in flour mixture, then dip in buttermilk and then toss with bread crumbs, making sure chicken is coated, and then place on prepared baking sheet. Repeat with remaining tenders.
  5. Spray tops of chicken with olive oil cooking spray. Bake for 20 minutes, or until chicken is thoroughly cooked.
  6. Meanwhile, whisk the hot sauce and butter until combined. Once chicken is done, remove from oven and drizzle with hot sauce mixture, making sure to flip to get both sides.. Serve immediately.
