2 cups whole wheat pastry flour (or all purpose flour)
2 tablespoons packed brown sugar
2 teaspoons baking powder
1 teaspoon baking soda
½ teaspoon salt (optional)
2 cups buttermilk
½ cup oil (I use canola)
2 eggs
1 teaspoon vanilla extract
1 cup blueberries, plus additional for serving
Instructions
In a medium bowl, whisk flour, sugar, baking powder, baking soda and salt.
In a large bowl, whisk buttermilk, oil, vanilla and eggs. Add flour mixture to buttermilk mixture, stirring until just combined. Let mixture sit for 10 to 30 minutes.
Toss blueberries in 1 teaspoon flour and fold into batter.
Preheat waffle iron and cook according to manufacturer directions for your waffle iron.
