With Fall upon us, I am in full pumpkin mode.  So far I have made pumpkin cakepiepastamuffins, and still have more pumpkin recipes I want to make this season.   Not only do I love pumpkin puree, I also adore pumpkin seeds and pepitas!  Pepitas are  the lovely little raw green seeds inside the pumpkin seed shell.  They are a great alternative to nuts, yet offer many of the same health benefits.  Like nuts, they are packed with protein, vitamins and antioxidants.  I find them in the bulk bin at the grocery store or sometimes near the bags of sunflower seeds….

With Football season means it is tailgating time!  Whenever I’m tailgating, at a barbecue, picnic or party, the first thing I look for is something healthy, like fresh vegetables.  And if there is something healthy to go with them, such as hummus, I am a happy girl!  It just so happens that ‘tailgating’ is the theme for this week’s Sunday Supper, and I am bringing to the party a healthy treat to go with that ~ Sweet Potato Hummus!

Who would have thought the addition of sweet potato to a basic hummus recipe, along with some spice and some heat, would result in such a tasty (and healthy!) dip.   Paprika and chipotle seasoning really enhance the sweet potato and are otherwise complementary to the traditional hummus flavors.  Sweet Potato Hummus is also very easy to make and a wonderful accompaniment to a vegetable tray, pretzel crisps or whole wheat pita chips. It would also be great on a wrap or as a sandwich spread.

Honey Roasted Chickpeas with Sea Salt are a healthy, sweet and salty snack that is easy to make.  They are high in fiber, protein-packed, gluten free, dairy free…and Adam can’t get enough of them (in other words, they’re toddler friendly too!)

Honey Roasted Chickpeas are made with only a few simple ingredients, and you most likely have everything you need already in your pantry.  In fact, all you really need is one ingredient, and that’s the chickpeas.  The additional ingredients are simply for flavoring, but roasted chickpeas are super crunchy and delicious straight from the oven.  In this case I made them honey roasted with sea salt, however I have other variations in the works that I am excited to share with you soon!

Honey Roasted Chickpeas with Sea Salt
 
Yields: 4 servings
Ingredients
  • 15 ounce can chickpeas (garbanzo beans)
  • 1 tablespoon honey
  • ½ tablespoon canola oil (or other neutral tasting oil)
  • sea salt, add to taste
Instructions
  1. Preheat oven to 375 degrees. Line a rimmed baking sheet with parchment paper and set aside.
  2. Empty chickpeas into a colander. Rinse until no longer foamy and drain. Put chickpeas onto paper towels to pat dry. (Optional: remove skins from chickpeas. Not necessary, but I recommend it).
  3. Place chickpeas in a single layer on prepared baking sheet. Bake for 45 minutes, or until chickpeas are crunchy. (If they're soft, put them back in for 5 minutes until crunchy).
  4. Meanwhile, in a medium bowl, whisk honey and oil. Add hot chickpeas and toss to coat. Pour chickpeas back on lined baking sheet and return to the oven for 5 to 10 minutes, or until caramelized. Sprinkle with sea salt, as desired, and let cool. Store in an airtight container.

Mini Deep-Dish Pizzas made in a muffin tin

Mini Deep-Dish Pizzas

Individual deep dish muffin tin pizzas
Mini Deep-Dish Pizzas are fun, little individual deep dish pizzas made in a muffin tin.  First you roll out little pizza dough circles and then gently put them in the muffin cups.  Then fill each dough round with your desired sauce and toppings and then top it with cheese.   I used premade dough (from Trader Joe’s), topped them with a marinara sauce, broccoli, red onion and mozzarella cheese, and they came together in less than 30 minutes.  These Mini Deep-Dish Pizzas are completely customizable with your favorite sauce and toppings.  Mini Deep-Dish Pizzas are a definite crowd-pleaser. Besides – there is always something fun about anything in miniature!


Today I am being featured over at Momma’s Meals where I’m being featured as part of Tammi’s Featured Fridays series!  Every Friday, Tammi gets to know her fellow bloggers and makes one of their recipes to share with her family and then with her readers.

I thought it would be fun to make something from Tammi’s site to share with you, and her Individual Deep Dish Pizzas were perfect!  Incidentally I had been looking at an Everyday Food recipe for little deep dish pizzas made in a muffin tin, so these Mini Deep-Dish Pizzas that I’m sharing with you is sort of a combination of the two recipes.

Mini Deep-Dish Pizzas
 
Yields: 12 pizzas
Ingredients
  • Cooking spray
  • All-purpose flour, for rolling
  • 1 pound pizza dough (homemade or store-bought) - in 12 pieces
  • Salt and pepper
  • 1 cup pizza sauce (I used a homemade marinara sauce)
  • Your favorite pizza toppings - about 1 to 2 tablespoons per pizza (I used chopped broccoli and red onion)
  • 1 cup shredded part-skim mozzarella cheese
Instructions
  1. Preheat oven to 450 degrees. Spray 12 standard muffin cups with cooking spray. Set aside.
  2. On a lightly floured surface, roll out each piece of pizza dough into 6-inch circles. Place into prepared muffin cup, gently pressing dough into bottom and up the sides. Season with salt and pepper as desired.
  3. Put 1 tablespoon sauce in each dough cup. Top sauce with 1 to 2 tablespoons of pizza toppings and then top with cheese.
  4. Bake until dough is browned and crisp, approximately 12 minutes. Let cool for 2-5 minutes before removing from cups.

Edamame Guacamole

One of our favorite cuisines is Mexican, and an essential accompaniment is (of course) guacamole.  For a while now, I have been saving recipes for guacamole and finally decided it was time to make my own.  I wanted to give it with a healthy twist incorporating one of my favorite foods – enter Edamame Guacamole.

This guacamole did not disappoint.  There are little flecks of edamame throughout, adding a protein and fiber boost.  Along with the good fats from the avocado, this guacamole is a nutrition powerhouse.  The combination of the onion, chile and salsa (I used medium) give this guacamole some zip without being overpowering.  Below I listed the amounts that I used, but really everything can be adjusted to taste.  It is such a flexible and forgiving recipe.    This Edamame Guacamole tasted so fresh and delicious, I almost grabbed a bag of baked tortilla chips and some crudites and called it dinner.  Almost….but I needed to save some for a special recipe that I will be sharing with you tomorrow.  Edamame Guacamole meets an old childhood favorite!

Edamame Guacamole
 
Yields: 2 cups
Ingredients
  • 1 avocado, pitted and peeled
  • 1 cup shelled edamame (thawed if frozen - that is what I used)
  • ½ cup red onion, chopped
  • 1 chipotle chile in adobo, chopped
  • ¼ cup salsa
  • 2 to 3 garlic cloves, minced
  • juice of 1 lime
  • Salt and Pepper
  • Fresh cilantro, chopped (optional, to taste)
Instructions
  1. Put avocado, edamame, onion, chile, salsa, garlic and lime in food processor and pulse until smooth. Add cilantro, if desired. Tranfer to a bowl, add salt and pepper to taste and serve.

Mushroom and Leek Pita Pizzas

After a long day of work and play, it’s nice to have some healthy quick and easy meals ideas on hand.  These Mushroom and Leek Pita Pizzas fit that bill quite nicely.  Mushrooms and leeks are a delicious combination, and a little garlic and crushed red pepper give this pizza a little pizazz.  The whole wheat pitas serve as a sturdy crust.  Topped with some low fat ricotta and lots of vegetables, these pitas turned pizzas become a healthy dinner in less than 20 minutes.

Mushroom and Leek Pita Pizzas
 
Yields: 2 servings
Ingredients
  • Cooking spray
  • 1 cup leeks, sliced (approximately 1 leek)
  • 2 garlic cloves, sliced
  • 2 cups sliced mushrooms (5 ounces)
  • Coarse salt and fresh ground pepper, to taste
  • 2 whole wheat pitas
  • ¼ cup low fat ricotta cheese
  • 2 tablespoons Parmesan cheese, freshly grated
  • 2 teaspoons olive oil, for drizzling
  • Crushed red pepper flakes, to taste
Instructions
  1. Preheat oven to 425 degrees. Line a baking sheet with parchment paper and set aside.
  2. Spray large nonstick skillet with cooking spray and heat over medium heat.
  3. Add leeks and mushrooms and cook until tender, about 5 minutes. Add garlic and cook until golden, about 1 to 2 minutes (watch carefully to not over cook garlic). Season with salt and pepper.
  4. Place pitas on prepared baking sheet. Spreach each pita with 2 tablespoons ricotta cheese. Drizzle with 1 teaspoon olive oil, and top with vegetable mixture. Sprinkle with Parmesan cheese and red pepper flakes (if using).
  5. Bake until pita is golden and cheeses begin to melt, about 6 to 8 minutes. Serve immediately.

What happens when you cross peanuts with pretzels and Reese’s peanut butter puffs cereal? This Reindeer Snack Mix, that’s what! Each ingredient on its own is fabulous, of course. When mixed together with some melted white chocolate, you have a snack mix that is really too good for words. Yes folks, I am speechless. Or maybe I am just too busy stuffing my face with more snack mix. 🙂 Either way, I will simply leave you with this. It’s the holidays. You are bound to have guests or to be a guest. Here is a fun and easy little snack that will leave everybody singing your praises this holiday season!

Yields: about 3 quarts
Ingredients
  • 4½ cups Reese's Peanut Butter Puffs
  • 4 cups miniature pretzels
  • 12 ounces lightly salted peanuts
  • 12 ounces white chocolate chips
Instructions
  1. In a large bowl, combine cereal, pretzels and peanuts.
  2. In a microwave, melt the white chocolate chips; stir until smooth.
  3. Pour melted white chocolate over cereal mixture and toss to coat.
  4. Immediately spread onto waxed paper-lined baking sheets. Let stand until set, about 20 minutes. Break into pieces and store in airtight container.
