We have the usual fixings, along with our favorite summer produce, such as watermelon, corn, cucumber, and green salad. This easy recipe for Spicy Black Bean Quesadillas takes only minutes to make! First start by firing up the grill to cook MorningStar® Farms Spicy Black Bean Burger: America’s #1 Veggie Burger, alongside your favorite grillables, until grilled to perfection.
Next cut the burger into pieces and sprinkle over a tortilla, top with remaining desired quesadilla ingredients, such as spinach, corn and cheese, and then cover with another tortilla. Then simply put in the oven to bake on a lined cookie sheet for 10 minutes. It is just enough time to prepare any sides or accompaniments for the quesadillas, set the table, or finish preparing the rest of the feast! Not only does baking quesadillas free your hands for tasks, but it is a healthier option that still tastes great!

- 4 MorningStar Farms® Spicy Black Bean Burger
- 8 8-inch tortillas
- 1 cup corn kernels
- 1 cup chopped fresh spinach
- 1 cup shredded cheese (colby jack or cheddar)
- Preheat oven to 400F degrees. Line a cookie sheet(s) with parchment and set aside.
- Meanwhile, grill MorningStar Farms® Spicy Black Bean Burger according to package instructions. Remove from grill and cut into pieces.
- Place 4 tortillas on prepared baking sheets. Sprinkle each with burger crumbles, corn, spinach and cheese. Top with remaining tortillas.
- Bake for 8 to 10 minutes, or until cheese is melted and tortillas get crispy. Let cool for 5 minutes and then cut into wedges.
