Nothing beats the ease of a simple marinated chicken recipe cooked on the grill for summer dinners! Grilled chicken is quintessential summer time comfort food at its finest. This Easy Herb Grilled Chicken recipe is simple, uses only a few pantry ingredients and is something the whole family enjoys.
Easy Herb Grilled Chicken is prepared in minutes – simply trim and cut chicken into desired sizes (I divide 1 pound into 4 1/4 pound portions). Then in a small bowl whisk red wine vinegar, balsamic vinegar, olive oil, garlic, herbs and salt and pepper as desired. Pour chicken and marinade into a zip top baggie and refrigerate for at least 2 hours. Sometimes I prepare the chicken the night before to let it marinate overnight for a quick weeknight dinner on a busy day. Then grill until thoroughly cooked. This recipe is so versatile it pairs well with a healthy green salad, grilled corn or any favorite summer sides.
Easy Herb Grilled Chicken was inspired by one of my most popular recipes (Grilled Honey Balsamic Chicken – totally delicious!). In summer months we make Grilled Honey Balsamic Chicken frequently, until out of the blue my 4 year old decided balsamic vinegar was too strong for her (…because 4 year olds). Anyway, I was motivated to come up with an equally quick easy and delicious recipe that would please all palates. Enter Pompeian Organic Red Wine Vinegar.
Pompeian Organic Red Wine Vinegar (with the mother) has a delicious and universally appealing flavor. It is best used for salad dressing, sauces and marinades, produced with organic grapes that are harvested a peak maturity in order for the red wine vinegar to maintain the complex flavor characteristics of the grapes. Pompeian Balsamic Vinegar still does make an appearance in this recipe to round out the flavors beautifully – it is just so good!
Get ready to fire up the grill for this tasty summertime comfort food made easy ~ Easy Herb Grilled Chicken!
- 3 tablespoons Pompeian Organic Red Wine Vinegar
- 1 tablespoon Pompeian Organic Balsamic Vinegar
- 1 tablespoon Pompeian Robust Extra Virgin Olive Oil
- 2 cloves garlic, minced
- 1½ teaspoons dried Italian herbs
- Salt and pepper, as desired
- 1 pound boneless, skinless chicken breast
- In a small bowl, whisk the vinegar, olive oil, garlic, herbs, salt and pepper until combined.
- Trim and cut chicken into desired size(s) and put in zip top bag. Pour vinegar mixture in bag with chicken, making sure chicken gets coated. Refrigerate for at least two hours, turning the bag occasionally.
- Grill chicken over medium-high heat until cooked thoroughly (approximately 4-5 minutes per side).
