One of the top food trends of 2017 are bowls, such as Buddha bowls, protein bowls, and grain bowls. These colorful, filling dishes are built in a large bowl and are composed of grains, veggies, proteins and a flavorful dressing. With this growing food trend in mind, I was inspired by one of my most popular recipes (Baked Balsamic Chicken) to add some veggies and quinoa and create this Honey Balsamic Chicken Quinoa Bowl recipe!
This Honey Balsamic Chicken Quinoa Bowl is protein-packed, vegetable-filled dish with a delicious balsamic vinegar and honey dressing to bring it all together. Made in under 30 minutes, this bowl is a healthy and easy way to enjoy juicy shredded chicken, quinoa and your favorite vegetables. In this recipe, I used chopped broccoli florets, carrots and cherry tomatoes – these are some of our favorites and what we already had on hand. Any vegetables can be used, which is part of the beauty of the bowl trend…flexibility!
What really makes this Honey Balsamic Chicken Quinoa Bowl is the delicious honey balsamic dressing. My 7 year old said the honey balsamic chicken is his favorite part, and polished off two helpings in no time! Fortunately, it takes only minutes to make (seconds, really…) and adds so much flavor to the dish. In this recipe, I used Pompeian Organic Balsamic Vinegar.

What I love about bowls are the endless possibilities and the flexibility with the recipes. While most recipes are created with intention, when it comes to bowls, the creative journey is fun and rewarding, especially when the result is this healthy and delicious Honey Balsamic Chicken Quinoa Bowl!
- 1 pound boneless, skinless chicken breast
- ¼ cup Pompeian organic balsamic vinegar
- 2 tablespoons Pompeian Robust Extra Virgin Olive Oil
- 2 tablespoons honey
- 2 garlic cloves, minced
- 1 teaspoons dried oregano (or any dried herb)
- 6 cups assorted vegetables, bite-size
- 2 cups cooked quinoa
- POACH CHICKEN: Put chicken in sauce pan and cover with water. Bring to a boil. Reduce to a simmer, cover and cook for 10 minutes, or until chicken is thoroughly cooked. Carefully remove cooked chicken to a separate bowl and using two forks, shred chicken.
- PREPARE DRESSING: In a small bowl, whisk vinegar, oil, honey, garlic and herbs. Pour half of the dressing over shredded chicken.
- ASSEMBLE BOWLS: Divide chicken among 4 separate bowls, and to each bowl, add ½ cup quinoa and arrange vegetables. Drizzle remaining dressing over bowls and enjoy!
