- 2 cups whole wheat pastry flour (or all purpose flour)
- ½ cup packed brown sugar
- 1½ teaspoons baking powder
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- ¾ cup buttermilk
- 2 eggs
- ¼ cup honey
- 2 tablespoons melted butter
- 1 tablespoon vanilla extract
- ¼ cup cinnamon sugar, for topping
- Preheat oven to 425F degrees. Spray doughnut pans with baking spray and set aside. Put cinnamon sugar in a bowl.
- In a large bowl, combine flour, sugar, baking powder, cinnamon and nutmeg.
- In a separate bowl, whisk buttermilk, eggs, honey, butter and vanilla. Add to flour mixture, folding gently until combined.
- Pipe batter into the wells of the doughnut pans, filling about ¾ full.
- Bake for 8 to 10 minutes, or until a toothpick inserted in the center comes out clean.
- Remove from pan and dip the top of each warm doughnut in the cinnamon sugar and set on a wire rack to cool completely.
