Slow Cooker Beef Black Bean Chili is an easy recipe for a healthy chili made in the slow cooker featuring lean beef, black beans and lots of vegetables for a complete meal in a bowl! {gluten free}
Now that Fall is here, we shift our focus from grilling to cooking low and slow. During these cooler months, we turn to comfort foods made healthier, such as stews, soups and chili. Whether it is in the slow cooker, braised or roasted, beef can be a huge part of your Fall low and slow experience.
For Sunday Supper this week, we are partnering with The Beef Checkoff and sharing recipes to build a healthy plate with beef cooked low and slow. This Slow Cooker Beef Black Bean Chili is one of the easiest chili recipes. Packed with lean beef, black beans, and lots of vegetables, this chili is filled with protein, fiber and vitamins to help fuel your body!
This recipe for Slow Cooker Beef Black Bean Chili uses beef stew meat, which becomes tender and juicy from slow cooking with the tomatoes and other vegetables. It is such a simple, classic dish. It also makes plenty, so it is great for tailgating, parties or to have leftovers on hand. Slow Cooker Beef Black Bean is one of my favorite meals to make for lunches throughout the week. It is versatile, nutritious and tasty!
- 1 pound beef stew beef, cut into 1-inch pieces
- 2 bell pepper, chopped
- 1 yellow onion, chopped
- 3 cloves garlic, finely minced
- 2 tablespoons chili powder
- 1 tablespoon ground cumin
- 2 cans (15 ounces each) black beans, rinsed and drained
- 2 cans (14½ ounces each) diced tomatoes with chiles, undrained
- ¼ vegetable broth or water (optional - see notes)
- 4 tablespoons tomato paste
- Put beef in slow cooker (I use a 6 quart). Stir in peppers, onion, garlic, chili powder, cumin, black beans, and tomatoes.
- Cover and set to low. Cook for 8 to 10 hours.
- Uncover and stir in tomato paste. Serve with desired toppings.

When it comes to choosing healthy proteins, lean beef is a delicious, healthy choice that is a perfect partner for fruits, vegetables and whole grains, making it even easier to enjoy a balanced diet. I always forget about using black beans in chili until I get reminded by wonderful looking recipes like this. Nice to see chunks of beef too instead of ground beef.
