For a delicious, crowd-pleasing appetizer featuring Idaho® potatoes, try this easy recipe for Broccoli Cheddar Stuffed Potato Skins {gluten free}
Potato skins are always a fun appetizer. What is not to love with a crispy potato shell filled with so many tasty possibilities! These Broccoli Cheddar Stuffed Potato Skins are inspired by the ever popular appetizer, only made a little healthier with broccoli and skipping sour cream and butter. Of course there is plenty of cheddar cheese to keep things delicious!
For this recipe, I typically use Idaho® russet potatoes, though any variety of Idaho® potatoes will work (adjust ingredient amounts and bake time accordingly for baking the potatoes). Once the potatoes are in the oven baking, I shred the cheddar cheese and prepare the broccoli filling.
The broccoli filling is simple – first, steam the broccoli florets, let them cool and chop. Next, sauté chopped onion, garlic and then add the chopped broccoli, toss around until combined and set aside.
Once the potatoes are softened and cooled, cut them in half and scoop out the flesh (which can be reserved for another use, like mashed potatoes). Spray the skins and put them back in the oven to get all crispy, golden and delicious. Then simply fill with broccoli mixture, top with cheese and bake until melty and enjoy!
For another delicious twist on potato skins, try these Baked Potato Skin Pizzas which use the potato skin as the pizza crust and are topped with sauce, cheese and your favorite pizza toppings. In the post, I decorated them for Halloween, but they can be topped and decorated any which way. They are delicious!
- 4 Idaho® russet potatoes, scrubbed and pricked with a fork
- Cooking spray
- Sea salt
- 8 ounces broccoli florets, chopped
- 1 tablespoon olive oil
- 1 cup chopped yellow onions
- 2 garlic cloves, minced
- 1 cup cheddar cheese, divided
- Preheat oven to 450F°. Line a baking sheet with foil.
- Place potatoes on lined baking sheet and bake for 40 minutes, or until softened. Remove from oven and let cool.
- Cut each potato in half, lengthwise. Scoop out flesh, leaving about ¼-inch of potato on skin (reserve potato flesh for another use, like mashed potatoes). Spray skin-side of potato with cooking spray, sprinkle with sea salt and place flesh-side down on baking sheet. Bake for 15 minutes, or until slightly golden.
- Meanwhile, put broccoli in a microwavable bowl and cook for 3 minutes, or until crisp tender.
- Heat oil in nonstick pan over medium-high heat. Add onions and cook until softened (about 5 to 7 minutes). Add garlic and cook for 1 minute, or until fragrant. Reduce heat to medium, add broccoli and stir until heated through. Put in a bowl, add ½ cheddar cheese and stir until combined.
- Fill each skin with broccoli mixture and sprinkle with remaining cheese.
- Bake for 5 minutes, or until cheese has melted.
