During the week, dinnertime is a busy time.  Once Adam gets home from school, we all want to play outside on the playground, go to a park, do Legos, in other words, pretty much do anything except stand in the kitchen to make a elaborate dinner.  There will be plenty of time for elaborate dinners in later years… I want to spend time with my kids now!  So when it comes to quick and easy meal ideas that require very little preparation, I am all over it!  This Grilled Teriyaki Chicken Salad recipe can be made in about 15 minutes (or less) using ingredients I have on hand at all times.  No muss, no fuss, no running to the store.  Just a simple, delicious dinner is served!

In fact, this Grilled Teriyaki Chicken Salad can be made easily while we are outside playing in the backyard, blowing bubbles and watching the sunset.  Simply fire up the grill, cook the chicken and pour on the sauce!  To make the salad, I tossed together some mixed greens with my favorite vegetables.  For the chicken, I simply seasoned it with salt and pepper before cooking on the grill.  Once the chicken is cooked, top it with Campbell’s Grill Sauces Grilled Teriyaki Chicken flavor, and slice to serve over the salad.

The vegetables that I list in the recipe below are simply a guide, but can easily be swapped with your favorites or to use up what you have on hand. For texture, I added some sesame seeds, but chow mein noodles or almonds would add a delicious crunch as well.  Combined with the simple to prepare chicken and the flavorful Campbell’s Grill Sauce to bring everything together, this Grilled Teriyaki Chicken Salad is something the whole family enjoys.

Nothing beats hearing the laughter of the kids on the swings together, or kicking the soccer ball in the goal (!) or just running laps around the house.  And nothing beats being able to eat a delicious, nutritious Grilled Teriyaki Chicken Salad packed with vegetables and lean protein, topped with a flavorful sauce… all with little effort.
Grilled Teriyaki Chicken Salad

Yields: 4 to 6 servings
Ingredients
  • 1½ pounds boneless, skinless chicken breast
  • salt and pepper
  • 1 package Campbell's Grill Sauces, Grilled Teriyaki Chicken flavor
  • 6 cups mixed greens
  • baby carrots, cut into matchsticks
  • steamed broccoli florets
  • green onions, chopped
  • sesame seeds (optional)
Instructions
  1. Season chicken with salt and pepper, as desired. Brush grill rack with oil and heat grill to medium. Grill chicken for 15 minutes, or until cooked through (time with vary depending on thickness). Remove chicken from grill and pour sauce over chicken.
  2. Meanwhile, in a large bowl, toss together mixed greens, carrots, broccoli, and green onions (and any other vegetables desired). Divide salad on serving plates and top with sliced chicken. Sprinkle with sesame seeds, if desired.
