Spinach Mushroom Skillet Lasagna is a deliciously cheesy, vegetarian lasagna made quick and easy for a weeknight…or any time! {vegetarian}
Pasta night is always a hit in our household, and the cheesier the better. Lasagna is one of my favorite cheesy pasta meals, but for a weeknight (or really any night with two little ones under foot), lasagna is just not happening. Or so I thought. Enter >this Weeknight Skillet Lasagna recipe which has all the tasty goodness of lasagna, only it is quick and easy made right in a skillet! Lasagna made in under 30 minutes is definitely doable!
Using that original recipe as a base, I transformed it into a vegetarian version ~ Spinach Mushroom Skillet Lasagna!
Given my family’s enthusiasm for lasagna, you can imagine the excitement once Spinach Mushroom Skillet Lasagna became a reality…on a school night no less! Adam pulled up a chair to help with the process, and it all came together very quickly and easily. Simple steps, simple ingredients.
First sauté the mushrooms, crushed red pepper and spinach.
Next add water, a jar of Ragú® pasta sauce (I used >Ragú® Old World Style® Traditional Sauce which has a delicious taste your whole family will love) and broken lasagna noodles. Adam was tasked with breaking the lasagna noodles into 2-inch size pieces, and it was a great activity to keep those little hands busy! Bring to a boil, cover and let the noodles cook, stirring frequently to keep them from sticking together or settling at the bottom.
Last, top with cheeses and cover to cook again until the cheese is melted. It’s that easy!

- 1 tablespoon olive oil
- 8 ounces mushrooms, chopped (I use baby bellas)
- 1 teaspoon crushed red pepper flakes (adjust to taste)
- 5 ounces fresh baby spinach, chopped
- 1 jar (24 oz.) Ragú® Old World Style® Traditional Sauce (or your favorite Ragú® Sauce
- 3 cups water
- 12 uncooked lasagna noodles, broken into 2-inch pieces
- 1¼ cups part-skim ricotta cheese
- ¾ cup (3 ounces) shredded part-skim mozzarella cheese
- Pour oil into a large skillet and heat over medium-high heat. Add mushrooms and cook until softened, about 5 minutes. Add red pepper flakes and spinach, cooking until spinach is wilted..
- Stir in sauce and water. Bring to a boil Stir in uncooked noodles. Reduce heat to medium and cook covered until noodles are tender, about 20 minutes. [Note: be sure to stir frequently so the noodles do not settle at the bottom of the pan]
- Top noodles with spoonfuls of ricotta cheese and then sprinkle with mozzarella cheese. Reduce heat to a simmer and cook covered until cheese are melted (about 5 minutes). Sprinkle with grated Parmesan cheese, if desired.
