Gingerbread Pancakes

Gingerbread is one of quintessential flavors of the holidays.  The warmth and spiciness illicit fond memories of gingerbread houses, cut out cookies, cake and more.  With the abundance of treats around this time of year, I like to find healthier ways to enjoy my favorite holiday flavors, such as these Gingerbread Pancakes.

Gingerbread Pancakes have the wonderful flavors of gingerbread wrapped up into a perfect breakfast for winter mornings. It starts with a basic buttermilk pancake base recipe, which tends to be lighter than comparable confections. The molasses, ginger, cinnamon and cloves give these pancakes the gingerbread taste that we love. While I have made these pancakes for years, I decided to try making them with Madhava Sweetener’s coconut sugar as an alternative to cane sugar.  It was fabulous!  I think coconut sugar has become my new secret ingredient for all breakfast and baked goods in the kitchen.

For a special holiday breakfast (or breakfast for dinner at our house!) these Gingerbread Pancakes are a wonderful way to enjoy the flavors of the season.

Gingerbread Pancakes

Ingredients
  • 2 cups whole wheat pastry flour (or all purpose flour)
  • 2 tablespoons coconut sugar
  • 2 teaspoon baking powder
  • 2 teaspoons ground ginger
  • 1 teaspoons cinnamon
  • 1 teaspoon baking soda
  • ¼ teaspoon ground cloves
  • 2 cups buttermilk
  • 2 eggs
  • ¼ cup molasses
  • 2 tablespoons canola oil
  • 2 teaspoons vanilla extract
Instructions
  1. In a large bowl, whisk flour, sugar, baking powder, ginger, cinnamon, baking soda and cloves.
  2. In a separate smaller bowl (or directly in a liquid measuring cup) whisk together the buttermilk, eggs, molasses, canola oil and vanilla.
  3. Add wet ingredients to dry ingredients, folding until just combined. Let sit for 10 minutes.
  4. Meanwhile, preheat a nonstick skillet to medium heat (325F degrees) and spray with cooking spray.
  5. Spoon batter onto skillet by the ¼ cupful (adjust to desired size) Cook for 3 to 4 minutes, or until bubbles form and the edges look set. Flip pancakes and cook for another 2 to 3 minutes, or until set.

I was recently given the opportunity to try Madhava Sweeteners’ coconut sugar and was pleasantly surprised.  I figured even though Madhava coconut sugar is an organic, unrefined sweetener, that sugar is sugar.  Well after experimenting with coconut sugar in baking, and in these Gingerbread Pancakes, I learned that coconut sugar offers a wonderful flavor (not coconutty) while also containing naturally occurring nutrients like magnesium, potassium, zinc, iron, B vitamins and amino acids.  Even in the bag, the coconut sugar smells am-a-zing!  It was the perfect addition to these Gingerbread Pancakes, and in these muffins, these brownies and more!
