Make fun, spooky and healthy pizzas with these Halloween Baked Potato Skin Pizzas that use a baked potato skin for the crust and are creatively topped with your favorite pizza toppings. {gluten free}
Halloween is one of my favorite holidays. It is fun, carefree and just feels less stressful most other holidays. We are starting to get into the Halloween spirit! This past weekend, we visited a pumpkin patch, decorated the house with Halloween decorations and started to talk about costumes. And then of course there are the Halloween recipes! I love to make pumpkin everything, candy-inspired treats and even decorate my food for Halloween. These Halloween Baked Potato Pizza Skins are always a favorite. They are healthy, fun and the kids love them (adults do too!)
To start making Halloween Baked Potato Pizza Skins, think baked potato skins with a pizza twist. The potatoes serve as the crust, that is simple, unprocessed and delicious (gluten free too). Then get creative, make-your-own-pizza style, with your favorite pizza toppings, to make Halloween-inspired creations. Olives can easily become eyeballs and cut into spiders (pepperoni also works really well!) Bell peppers are my favorite, and can also be used for spider legs, a mouth for a monster, the sky is the limit. If you’re really crafty, you could wrap up the cheese to create a mummy!
I have pictured a few examples of what we made, but there are unlimited possibilities and definitely no right or wrong way to make these Halloween Baked Potato Pizza Skins fun for Halloween. They are perfect for a Halloween party or simply an interactive dinner with the family.
- Idaho® russet potatoes, scrubbed and pricked with a fork
- Cooking spray
- Sea salt
- Pasta sauce (I used tomato basil)
- Mozzarella cheese
- Pizza toppings, such as olives, pepperoni, peppers, mushrooms
- Preheat oven to 400°. Line a baking sheet with foil.
- Place potatoes on lined baking sheet and bake for 40 minutes, or until softened. Remove from oven and let cool.
- Cut each potato in half, lengthwise. Scoop out flesh, leaving about ¼-inch of potato on skin (reserve potato flesh for another use, like mashed potatoes). Spray skin-side of potato with cooking spray, and place face down on baking sheet. Bake for 10 minutes, or until slightly golden.
- Fill each skin with pasta sauce, sprinkle with cheese and decorate with desired toppings.
- Bake for 10 minutes, or until cheese has melted. Enjoy!
