Chewy, chocolaty and delicious, these Coconut Oil Chocolate Chip Cookies are the best chocolate chip cookies ever!
I have tried many different chocolate chip cookie recipes in my day. There was a fantastic recipe I used to make when I was a kid, and then my grandma’s recipe, plus many others in between. There were pros and cons to each recipe, but in the end they were chocolate chip cookies and therefore delicious, right? Then one day we had our real estate agent, and dear friend, over for a visit. She generously brought us an oven mitt, a bag of chocolate chips and a recipe. The recipe was for these Coconut Oil Chocolate Chip Cookies, which ended up being the best chocolate chip cookies I have ever had in my life!
I realize it is a bold statement to say that these Coconut Oil Chocolate Chip Cookies are the best chocolate chip cookies ever, but those are the exact words I said with each bite of these tasty little cookies. Like I said, all chocolate chip cookies are tasty, but these Coconut Oil Chocolate Chip Cookies are definitely something special. Perhaps it is because of the coconut oil, the combination of sugars, the perfect chocolate chip to cookie ratio or simply just baking them just to the point of chewy perfection. I have been too excited to share this recipe with you to determine what makes them so wonderful, so we will just stick with the simple fact that they just are 🙂
- 1½ cups all-purpose flour
- ½ teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup coconut oil, room temperature
- ½ cup dark brown sugar
- ¼ cup granulated sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 cup semi-sweet chocolate chips
- In a small bowl, whisk together flour, baking powder, baking soda and salt. Set aside.
- In a medium bowl, using an electric mixer, cream together coconut oil and sugars until light and fluffy. Add egg and vanilla and beat until well combined.
- Gradually add dry ingredients to wet ingredients, stirring until well blended. Stir in chocolate chips.
- Refrigerate dough for 15 minutes (or more), if dough is too soft.
- Preheat oven to 350°F. Line cookie sheets with parchment paper.
- Scoop rounded tablespoonfuls of dough onto prepared cookie sheets, 2 inches apart.
- Bake for 7 to 9 minutes, or until edges are slightly brown. Transfer to a wire rack to cool completely.

Coconut oil is sooo good for you, too. My understanding that it even helps alleviate Alzheimer’s. Therefore, thanks to you and your real estate agent I have a great excuse to dig into chocolate chip cookies =)

I have friends who swear by coconut oil in chocolate chip cookies – I can see why! I love using coconut oil, it is so nice for dairy free alternatives, and these cookies look so soft, chewy, and utterly delicious!
I’ve heard so much about coconut oil and using it in different things. But you used it in chocolate chip cookies. And they are my absolute, unreal, die-hard weakness. So yeah, I’ll be making these for our 4th of July picnic, hands down!
