Lighter Chipotle Beef Tacos are an easy recipe for a healthier beef taco. {Gluten Free}
Back when Mike and I were first married, I tried to cook dinner every night. At the time, I was still working and often ended up at the office much later than he was. He could tell how tired I was after working 10+ hour days and wanted to help with dinner. He has always made a mean frozen pizza and used to cook a lot during his bachelor days. He told me he used to make tacos all of the time – meat plus a seasoning kit. Oy! I was excited for tacos, but my first thought was…where are the vegetables? He is very good at following a recipe, so we decided that I needed to come up with a healthier beef taco recipe that is easy to make.
We have been enjoying this recipe for Lighter Chipotle Beef Tacos for years. We took the basic concept of Mike’s tacos but made them healthier and (according to him) tastier! Lighter Chipotle Beef Tacos are made with lean beef, lots of vegetables, and spiced and seasoned to perfection. The filling can be put into your tortilla of choice (keep this in mind if you’re gluten free) and topped with cheese, avocado or any of your favorite taco toppings. It is also great served as a taco salad – I like mine topped with salsa as a low calorie topping instead of dressing. Enjoy!
- 1 teaspoon oil (I use canola oil)
- 1 large onion, chopped
- 2 bell peppers, chopped
- 1 chipotle pepper in adobo, chopped
- 1 cup water
- 3 garlic cloves, minced
- 2 tablespoons tomato paste
- 1 tablespoon chili powder
- 1 1 2/ teaspoons ground cumin
- 1 pound lean ground beef
- 12 tortillas (I use corn for gluten free)
- Topping: salsa, lettuce, cheese, tomatoes
- In a large nonstick skillet, heat oil over medium. Add onion and peppers, and cook for about 3 minutes. Add 1 cup water, turn heat up to medium-high and cook until water has mostly evaporated and vegetables have softened.
- Turn heat back down to medium, and stir in garlic, tomato paste, chili powder, cumin. Add beef, breaking it up with a spoon or spatula, and cook thoroughly (until no longer pink). Spoon filling into tortillas and top with desired toppings.

Mmmm – I love chipotles in adobo…such great flavor! I love making tacos like this; my husband usually puts his in a tortilla, and I opt for a taco salad (I use salsa as my dressing too!).
