Start your morning off right with whole wheat pancakes infused with coffee and creamer to make Extra Sweet & Creamy Coffee Pancakes!
What is your favorite breakfast? Are you a cereal person? Do you like smoothies? Pancakes? My usual breakfast rotates between a few different options, however one guarantee each morning is a hot cup of coffee. There is nothing better than holding that warm mug in your hands, watching the steam rise, and taking that first sip. Then it occurred to me – why not combine a breakfast staple (coffee) with a breakfast favorite (pancakes) to create Extra Sweet & Creamy Coffee Pancakes, the ultimate breakfast treat!
To give these pancakes a true coffee flair, I added some Coffee-mate coffee creamer to the batter. Not only is Coffee-mate perfect for bringing out the flavor in your coffee, but it works really well in recipes. I used Coffee-mate’s newest flavor, Extra Sweet & Creamy, which gives a balanced creamy taste with extra sweetness. The complementary flavors of the coffee pancakes with the Extra Sweet & Creamy coffee creamer were so good!

- 1 cup whole wheat pastry flour (or all-purpose flour)
- ⅓ cup malted milk powder
- 2 tablespoons instant coffee (or espresso powder)
- 1½ teaspoons baking powder
- ¼ teaspoon baking soda
- ½ cup milk (I used skim)
- ¼ cup Coffee-mate Extra Sweet & Creamy
- 1 teaspoon vanilla extract
- 2 tablespoons canola oil
- In a large bowl, whisk together flour, malted milk powder, coffee, baking powder and baking soda.
- In a separate bowl, whisk milk, Coffee-mate, vanilla and oil.
- Add milk mixture to flour mixture and fold until combined. Let batter sit for 10 minutes.
- Meanwhile, grease and preheat griddle to medium (I set my electric griddle to 325° F and then adjust as needed).
- Pour ¼ cup batter onto griddle for each pancake (my pan holds 4 at a time). Cook for 3 to 5 minutes, or until set and bubbles start to form. Flip and cook an additional 1 to 2 minutes, or until set.
