As we get closer to the Holidays and life gets more and more busy, quick and easy dinner recipes are always welcome. This Chicken Marsala with Parmesan Orzo takes less than 20 minutes to make a complete dinner.
First the Chicken Marsala is made using only 3 ingredients – chicken, olive oil for sauteing and Campbell’s Skillet Sauces: Chicken Marsala flavor. Can’t get much easier than that! This was my first time using Campbell’s Skillet Sauces, and I was really impressed. By having the sauce already made, it really speeds up the dinner preparation process. Plus it tasted wonderful and I loved that there were big pieces of actual mushrooms in there.
Of course you could easily serve this Chicken Marsala with any pasta (with or without Parmesan) or over rice, but Parmesan Orzo makes such a wonderful side dish. The Parmesan and oregano went perfectly with the Marsala, plus the orzo is really hands-off and does the cooking while you saute the chicken in the skillet.
This Chicken Marsala with Parmesan Orzo is a perfect weeknight, or any night, meal. Just add a green veggie or a simple salad, and dinner is served in less than 20 minutes!
- 1 tablespoon oil
- 1 pound boneless, skinless chicken breast, cut 4-ounce portions
- 1 package Campbell's Skillet Sauces: Marsala
- 1 cup orzo
- 1 tablespoon butter (I use light butter)
- 1¼ cups water
- 1¼ cups vegetable broth
- ½ cup Parmesan cheese
- 1 teaspoon dried oregano (or basil or Italian seasoning)
- Salt and pepper, to taste
- First make the orzo: In a sauce pan over low heat, melt the butter. Add the orzo, turn the heat up to medium-high and cook for 3 minutes. Stir in broth and water and bring to a boil. Cover and reduce to a simmer. Cook for 15 minutes, or until liquid is absorbed. Then remove from heat, add cheese and oregano, stirring to combine.
- While the orzo is cooking, make chicken: Heat oil in large skillet over medium-high heat. Add chicken, and brown on each side until mostly cooked through. Then add skillet sauce. Cover and reduce heat. Cook for 5 minutes, or until chicken is cooked through.
- Serve chicken over orzo, spooning any extra Marsala sauce over the top, and enjoy!
