Pumpkin Muffin Cookies

 Pumpkin Muffin Cookies have been a staple for us this Fall.  They are soft, chewy and healthy pumpkin cookies easily customized with chocolate chips, dried cranberries or your favorite mix-in. 

Pumpkin Muffin Cookies are are soft, chewy pumpkin cookies studded with chocolate chips or whatever mix-in you might enjoy, such as raisins, dried cranberries, nuts, the options are limitless.  These cookies are actually kind of a cross between a cookie and a muffin, which makes them perfect for an on-the-go breakfast or snack, or just any time you need a little pick-me-up.   Like I shared with you over doughnuts last week, lots of pumpkin recipes going on here!

The portability of these healthy pumpkin cookies made them an essential snack for us during our Fall activities.  If you follow me on Instagram, you already know that our favorite activity this Fall was Sever’s Corn Maze!

Sever’s Corn Maze has a corn maze (obviously), a straw maze for the little ones and so much more!  There was a petting zoo with goat, kangaroos, a camel and even a GIRAFFE!  That’s one tough giraffe to brave chilly Minnesota! 🙂  Adam especially enjoyed the Pumpkin Blaster, which is blasting mini pumpkins from a mini cannon to hit targets, such as an old truck, car, etc.  He’s such a boy.

The corn pit was always a favorite attraction as well.  Playing in the corn pit was like jumping and running through water, except instead of water you are playing in a huge pit of corn kernels.  The corn was cold, it ended up in pockets, socks, and everywhere else, but it was so. much. fun.  This place was a little boy’s dream, and we spent hours there every weekend.

Despite Adam’s frequent sneezes and drippies due to Fall allergies (which have been awful this year, have they not?), as long as we were equipped another Fall essential – lots and lots of Kleenex –  we were good to go!  Side note – I got these fancy little Kleenex wallet packs (for free!).  They slipped nicely in my purse, backpack or even my back pocket, making them super handy for when we’re on the go.

Anyway, back to the cookies.  Pumpkin Muffin Cookies are very easy to make, can be customized to your preferences, are low in fat, chewy, tasty and great for on-the-go.  They are quick and easy to make, which makes them a household staple once the Fall season hits.

Pumpkin Muffin Cookies
 
Yields: about 24 cookies
Ingredients
  • 2 cups whole wheat pastry flour (or all-purpose flour)
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon pumpkin pie spice
  • ¼ cup canola oil
  • 1 cup packed brown sugar
  • 1 egg
  • 1 egg white
  • 1 cup canned pure pumpkin
  • 1 teaspoon vanilla
  • ½ cup mini chocolate chips (or raisins, dried cranberries, etc.)
Instructions
  1. Preheat oven to 350F degrees. Line cookie sheet(s) with parchment paper and set aside.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon and pumpkin pie spice.
  3. In a separate large bowl, using a mixer (hand or stand) cream the oil and brown sugar until combined. Add egg, egg white, pumpkin and vanilla, beating until combined.
  4. Fold flour mixture into pumpkin mixture until almost combined. If desired, add chocolate chips (or dried fruit) and finish gently folding until just combined.
  5. Drop dough onto prepared cookie sheet(s) by the rounded tablespoonful. Bake for 12 to 14 minutes, or until slightly golden. Remove from oven, let cool on cookie sheet for 5 minutes and then remove to a wire rack to cool completely.
