He still loves English muffins though. So I decided to try an experiment. I decided to present his old favorite (cheese and English muffins) in the form of an English Muffin Grilled Cheese sandwich. Now I realize an English Muffin Grilled is simple and more of an idea, than an actual recipe. Sometimes that’s just what we need when trying to feed our picky eaters! - English muffins
- sliced cheese, any variety
- butter spray
- optional: any vegetables or spreads, such as tomatoes or pesto
- Preheat nonstick frying pan over medium heat.
- Split English muffin. Cover one half of the muffin with cheese and then top with the other half of the muffin. Spray the top of the muffin with butter and then place butter-side down in heated nonstick nonstick pan.
- While cooking, spray to of other muffins with butter spray. Cook until browned on one side and cheese starts to melt. Carefully flip sandwich and cook until the other side is browned and cheese is melted. Serve warm.
