If I had to pick my all time favorite food, it would be peanut butter (although cheese is a very close second). I love peanut butter sandwiches, cookies, bars, on apples, plain, ice cream…*sigh* I could go on and on.
So one day when I was opening my lovely jar of peanut butter, this chicken recipe caught my eye. Peanut butter? Chicken? Mmm… I do not often stumble upon many savory peanut butter dishes, so I was eager to give this a try.
As with most of my chicken recipes for the grill, I adapted this recipe to be quick and easy – mix the marinade, put marinade and chicken in Ziploc bag, let sit in the refrigerator for about 2 hours, grill, eat. It’s that simple.
Grilled Peanut Butter Chicken
Yields 4 servings
1/2 cup natural peanut butter
2 tablespoons reduced sodium soy sauce
2 tablespoons lemon juice
2 tablespoons white wine vinegar
4 cloves garlic, minced
1 teaspoon red pepper flakes
1 teaspoon ginger, grated or finely chopped
1 pound chicken tenders or chicken breast cut into 1 1/2 inch strips
- In a bowl, prepare the marinade by mixing all of the ingredients except the chicken.
- Put chicken in a Ziploc bag and pour marinade over chicken. Make sure chicken gets completely coated. Set in refrigerator for at least 2 hours.
- Lightly oil grates on grill OR use a foil tray to cook chicken.
- Place chicken on grill (or foil tray) and cook for 3-5 minutes per side, until chicken is cooked thoroughly.

This looks wonderful! Must try this.
Normally I’m not a peanut butter in savory foods type of person but I have to admit that this looks interesting Alida! Buzzed you! 🙂
Yum- my friends and I make something super similar except we use a can of beer and some green onions in the marinade. Yours looks super tasty!
@Christine: Thanks! I’m so excited you want to try this!
@Janet: Thank you! 🙂
@Lindselicious: Mmm – beer and green onions sound interesting. Thanks for your comment!
HI Alida! That looks absolutely delicious! I love the other ingredients that went with it. I come from a LONG line of peanut butter eaters. My sister and I have that listed as our top 3 favorite foods and it’s my father’s NUMBER ONE!
I try to eat it in moderation – it has health benefits, but a lot of fat for someone with my health issues….but it’s SO yummy!
Thanks for another great post (as always)!
That looks awesome!!! I looove peanut butter in pretty much any shape or form! 😀
Nice idea for chicken, I like Thai food and this really looks like a winner. Yum!
oh I just love savory versions of peanut butter! Definitely can’t wait to give this a go =)
HI Alida! I wanted to let you know that I told my sister about your blog…we were talking about new ways to make chicken and your recipe popped to mind! I hope she visits and enjoys this one….it sounds SO good!
I love PB too but with chicken? At first I wasn’t quite sure about how this would be. It looks delicious though and I love the hotness from the pepper flakes.
@Ann: I hear you with the moderation thing. Peanut butter is definitely yummy…a little bit goes a long way!
@Gen: I don’t know what I would do without peanut butter. It’s so yummy! Thanks for your comment!
@Tina: I’m learning to like more and more Thai food – really delicious flavors in Thai cuisine. Thank you for your comment!
@Peggy: I’m with you, though peanut butter in pretty much any form works for me 🙂 I hope you enjoy this if you try it. Thanks for the recipe!
@Ann: Yay, thank you! I hope she visits too and likes it if she tries it. Thanks for your comment!
@Ruby: Awesome! You will love your new BBQ – so many things to cook on the grill. Fingers crossed for some nice sunshine for you. Thanks for your comment!
@Emily: I was totally with you at first (chicken/peanut butter?) but I really like spicy peanut chicken, so figured peanut is peanut. Red pepper flakes are definitely key. Thanks for your comment!
Congrats on making Top 9 today!! This looks so delicious!! 🙂
Just bought a new bbq and have bookmarked this to try. Well, just as soon as the sun comes out! 🙂

MMM this looks awesome! I just found you on foodgawker, I can’t wait to try some of your recipes!
One of my favourite combos. I make an African version of this, where i mix the peanut butter ( i like to use the crunchy variety) with chilli and a bit of tomato puree to make a semi- chick paste in which to marinade the chicken pieces. I then oven cook slowly on medium heat which makes the chicken super- tender. The tenderness of the chicken with the crunchiness of the peanut butter is delicious.
Made this marinade and it was too thick. It was like nothing was added to the peanut butter. Not a marinade consistency. It would not pour out of the measuring cup it was made in. Came out in one big blob. I thinned it out with honey and a little water. Added just enough for it to pour out of the measuring cup and spread on the chicken. It worked perfectly. The end result was absolutely delicious and very moist chicken. Thanks for the recipe. My family thanks you too. We all loved it.
My son is on a health kick and eats boneless, skinless chicken 5 times a week. I tried a different marinade every week throughout the summer months. Well … It took me all summer to find the winner. He went nuts over this marinade. Thanks so much.
I made this today. Very tasty, even though I only had time to marinade for about 10min! Lost a lot of peanut butter on the grill, maybe I shouldn’t have used crunchy! Would cook again.
