Blueberry Buttermilk Waffles

Ingredients
  • 2 cups whole wheat pastry flour (or all purpose flour)
  • 2 tablespoons packed brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt (optional)
  • 2 cups buttermilk
  • ½ cup oil (I use canola)
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup blueberries, plus additional for serving
Instructions
  1. In a medium bowl, whisk flour, sugar, baking powder, baking soda and salt.
  2. In a large bowl, whisk buttermilk, oil, vanilla and eggs. Add flour mixture to buttermilk mixture, stirring until just combined. Let mixture sit for 10 to 30 minutes.
  3. Toss blueberries in 1 teaspoon flour and fold into batter.
  4. Preheat waffle iron and cook according to manufacturer directions for your waffle iron.
