Oatmeal Cranberry Snack Bars

Ingredients
  • 2 cups whole wheat pastry flour (or all-purpose flour)
  • 2 cups rolled oats (I used quick oats)
  • 1 teaspoon baking soda
  • 1 teaspoon orange zest (optional)
  • ½ teaspoon salt
  • ½ teaspoon cinnamon
  • 1 cup butter, such as I Can't Believe It's Not Butter!® Spread
  • 1 cup packed brown sugar
  • ¾ cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups dried cranberries
Instructions
  1. Preheat oven to 350F degrees. Spray a 13x9-inch baking pan with baking spray and set aside.
  2. In a medium bowl, whisk flour, oats, baking soda, zest (if using), salt and cinnamon.
  3. In a large bowl, cream butter and both sugar until combined and fluffy. Add eggs, one at a time) and vanilla and continue to beat until combined.
  4. Gradually add oat mixture to butter mixture and beat on low until combined. Fold in cranberries.
  5. Pour mixture into prepared baking pan. Bake for 25 to 30 minutes, or until bars start pulling way from the sides of the pan. Remove pan to a wire rack to cool completely and cut into squares.
