Roasted Garlic Hummus
 
Ingredients
  • 1 whole head of garlic
  • 1 teaspoon olive oil
  • 1 can (15 ounces) garbanzo beans (chickpeas)
  • 6 tablespoons tahini
  • 2 tablespoons lemon juice (or water)
  • 1 teaspoon paprika
  • crushed red pepper, to taste
Instructions
  1. Preheat oven to 400F.
  2. Remove paper skins from garlic head, but do not separate cloves. Use a serrated knife to slice off the top ¼ inch of the garlic bulb. Place sliced bulb on top of a sheet of foil. Drizzle 1 teaspoon olive oil inside garlic bulb. Wrap foil around garlic bulb and place on a baking sheet. Bake for 20 to 30 minutes, or until garlic cloves are tender. Let cool.
  3. Put cooled roasted garlic to a food processor. Add the chickpeas, tahini, and lemon juice and process until combined. Season with paprika, adjust to taste and continue to process until smooth. Sprinkle with crushed red pepper, if desired.
