Cook veggie burger according to package instructions.
Meanwhile, in a small bowl, whisk the egg and egg whites until combined. Add salt and pepper, as desired. (Note: add in any other seasonings you may want in this step).
Pour eggs into a nonstick skillet sprayed with cooking spray. Stirring occasionally, cook until the eggs are set.
Put toasted English muffin half on plate. Top with shredded cheese, veggie burger, and cooked eggs. Sprinkle with chopped grape tomatoes and more cheese, if desired.
