During the summer when the kids are home, they keep me on my toes all day long. From park trips to the zoo to swimming to let’s do arts and crafts or ‘we should really bake something’…the fun is never ending. I love every minute of it, but sometimes I find myself nodding off in the afternoons when napping really is not an option (or so I am told!). While I typically enjoy my Caribou Premium Iced Coffee as-is, I thought it would be fun to transform them, using a simple recipe, into a delicious frozen treat ~ Iced Coffee Yogurt Pops.
The recipe is so easy and tasty! Simply combine vanilla Greek yogurt with a favorite Caribou Premium Iced Coffee, pour them in small paper cups with a stick and freeze. (Of course frozen pop molds work too, but I like ease of low-maintenance paper cups). Iced Coffee Yogurt Pops are great for breakfast, an afternoon snack or any time.
- ¾ cup Caribou Premium Iced Coffee (any flavor)
- 1¼ cups vanilla Greek yogurt (or regular vanilla yogurt)
- Put six 3-ounce paper cups on a plate. Get six wooden sticks and set aside.
- In a bowl, whisk the coffee and yogurt until combined. Divide mixture evenly among cups. Put a wooden stick in the center of each cup. Place plate in freezer for at least 2 hours.
- To serve, simply peel paper cup from pop, and enjoy!
