Now that summer is drawing near, I wanted to transform one of our weeknight favorite dinners (Baked Balsamic Chicken) into another weeknight favorite cooked out on the grill. The kids get to play outside while we grill up a tasty feast – everybody wins! Since this recipe was made with my toughest little critics in mind, I decided to sweeten up my original recipe with a little honey. The result is this incredible, tender, slightly sweet and delicious Grilled Honey Balsamic Chicken!

Simply combine vinegar, honey, garlic and herbs in a small bowl and pour that mixture into a large resealable bag. Next add chicken into the bag, toss to coat and let marinate until grill time!  The longer the chicken marinates the more tender and flavorful the chicken will be.

For the herbs, I use Italian herb seasoning, but any of your favorite herbs will work. For the chicken, I cut the chicken into four 4-ounce portions and grill about 5 minutes per side. Please adjust timing based on the size of your cut and thickness of the chicken.

Grilled Honey Balsamic Chicken

Ingredients
  • ¼ cup balsamic vinegar
  • 2 tablespoons honey
  • 3 cloves garlic, finely minced
  • 1 teaspoon Italian herb seasoning (or other herbs)
  • 1 pound boneless, skinless chicken breast
  • Salt and pepper
Instructions
  1. In a small bowl, whisk vinegar, honey, garlic and Italian herb seasoning. Pour mixture into gallon resealable plastic bag.
  2. Trim and cut chicken breast as desired and season with salt and pepper. Place chicken in bag with marinade and mix around to coat chicken. Refrigerate for 2 hours to overnight.
  3. Preheat grill to medium high. Cook chicken on both sides until thoroughly cooked (time will vary depending on size and thickness of chicken)
