Chocolate Caramel Coconut RITZ Cookies are a fun treat made using only 3 simple ingredients – a chocolate covered caramel candy, toasted coconut and RITZ crackers.
During spring break this year, we have enjoyed many park visits, going to the zoo and on bike rides, just doing whatever it is that kids like to do. Of course during all of these fun excursions, my bag is packed with a favorite snack. We recently discovered RITZ Fresh Stacks, which is a mini-sleeve of RITZ Crackers that fits perfectly in my backpack for our snack on-the-go.
As we were enjoying our latest RITZ cracker snack, we decided to brainstorm ideas of what we could do with our RITZ crackers. One said chocolate, the other said toasted coconut – so many delicious ideas that resulted in these Chocolate Caramel Coconut RITZ Cookies!
Chocolate Caramel Coconut RITZ Cookies are made using a chocolate covered caramel candy and some toasted coconut, sandwiched between two RITZ crackers. They have an appealing salty-sweet flavor combination that is always so popular, making them great for parties, or any time really. The RITZ crackers add a nice crunchy-salty taste that pairs deliciously with the sweet chocolate, caramel and toasted coconut.
What I love most about Chocolate Caramel Coconut RITZ Cookies (besides being tasty!) is how quick and easy they are to prepare. They are so simple to make, my kids can really get involved (which they love) and my husband can even make them!
First simply lay RITZ Crackers on a lined cookie sheet. Sprinkle the crackers with toasted coconut and then top them with a chocolate covered caramel. Bake for about 4 minutes.
Remove from the oven when the chocolate soften, sprinkle with more coconut and cover with another RITZ Cracker. Let cool completely. That’s it!
- 12 RITZ Original crackers (from RITZ Fresh Stacks)
- 6 chocolate covered caramels (I used Rolo)
- toasted coconut
- Preheat oven to 350F degrees. Line baking sheet with parchment.
- Place 6 RITZ crackers on prepared baking sheet. Top each crackers with a pinch of toasted coconut and then with one chocolate covered caramel candy. Bake for 4 minutes, or until candy softens (but not melted). Remove from oven. Top melted candy with a pinch of toasted coconut and with another RITZ crackers. Let cool completely before serving.
