Now that we have snow on the ground and have experienced sub-zero temperatures, it feels like a true Minnesota winter. This is the time of year soup was made for! Especially after a fun holiday filled with cookies and treats, my body is craving foods with vegetables…and lots of them. Again…soup!
So I turn to our pantry filled with my family’s favorite Progresso™ soups, made with wholesome, quality ingredients that I feel good about serving them. While we often enjoy soup on its own, here are a some of my favorite easy recipes (made healthier) to pair with soup!
Of course! Grilled cheese and soup are a classic pairing, like peanut butter and jelly or chocolate.
However, in an effort to keep meals healthier, I like to make my soup pairings lighter than a traditional grilled cheese. That is why I was so excited to discover a baked grilled cheese. Not only does a baked grilled cheese require less butter, but baking leaves my hands free to get more done (like cook the soup!) Easy peasy, and delicious! Here are links to my favorite recipes:
They are not much different than a grilled cheese sandwich, but quesadillas have become a recent favorite pairing with soup.
I also enjoy quesadillas baked for a healthier, easier option. The possibilities for flavors of baked quesadillas are endless. Here are a couple of my favorites (one also happens to use soup as part of the filling):
In an effort to eat up leftovers, quinoa bites became an accidental soup pairing…but it just works! Must be all the cheese. 🙂

For even more vegetables, I like to pair my soup with a simple tossed green salad using up whatever salad fixings I have on hand. Spinach, carrots, tomatoes and onions, sometimes sweet potatoes, black beans, cheese, sunflower seeds, dried cherries – a delicious salad can come together easily with very little effort. No recipe required!
