Roasted Garlic Hummus is a healthy dip (or spread) made with roasted garlic, and other simple ingredients, that takes only minutes to prepare. {vegan, gluten free}
With Halloween just around the corner, there are visions of candy corns and chocolate bars dancing in my head. While sweet recipes are always a favorite of mine to make (and eat!), this year I am feeling the need to balance the sweet with some healthier savory, ghoulish delights, such as this Roasted Garlic Hummus. Roasted Garlic Hummus is a perfect accompaniment for dipping veggies, crackers, or pita chips during your Halloween celebration,…with enough garlic to ward off those vampires!
Homemade Roasted Garlic Hummus is so delicious and very easy to make. It seems everybody has a favorite method for roasting garlic, from using the microwave to the oven. In this recipe I listed the method I used, but feel free to use what works for you for that step (and I’d love to hear if you do something different!) Once the roasted garlic is cooled, everything gets tossed into the food processor and pulsed until smooth. I had fun decorating this hummus with my favorite black olive spiders, but it would also be fun served in a Jack-o-Lantern bell pepper or any other Halloween-inspired decorations. There are limitless possibilities for giving the hummus a frightfully festive feel!
- 1 whole head of garlic
- 1 teaspoon olive oil
- 1 can (15 ounces) garbanzo beans (chickpeas)
- 6 tablespoons tahini
- 2 tablespoons lemon juice (or water)
- 1 teaspoon paprika
- crushed red pepper, to taste
- Preheat oven to 400F.
- Remove paper skins from garlic head, but do not separate cloves. Use a serrated knife to slice off the top ¼ inch of the garlic bulb. Place sliced bulb on top of a sheet of foil. Drizzle 1 teaspoon olive oil inside garlic bulb. Wrap foil around garlic bulb and place on a baking sheet. Bake for 20 to 30 minutes, or until garlic cloves are tender. Let cool.
- Put cooled roasted garlic to a food processor. Add the chickpeas, tahini, and lemon juice and process until combined. Season with paprika, adjust to taste and continue to process until smooth. Sprinkle with crushed red pepper, if desired.
