Many, many years ago, I was asked to bring appetizers to a Labor Day party. I chopped some veggies, concocted a couple dips on the fly and was good to go.  The dips were a ranch dill and a spinach artichoke.  They were both creamy, easy to make, and used the same secret ingredient.  

That secret ingredient was MIRACLE WHIP Dressing.  I remember my grandma often used MIRACLE WHIP to make recipes extra special, so I must have been channeling her when coming up with these dip recipes.  Anyway, I brought them to the party and they ended up being a huge hit! I had more people ask me for the recipes than ever before, which was so surprising they were so casually put together.  Sadly this was many years ago, and after many household moves, I no longer have the recipes.  Big bummer!

Fortunately, in preparation for another party, I found this recipe for Creamy Spinach and Artichoke Dip. It looked just as easy as my old recipe, plus it also uses MIRACLE WHIP Dressing.  Unlike my old recipe, it contains green onions and chipotle peppers in adobo sauce, which were intriguing additions.  It was worth a try, right?  The result was fabulous!  The combination of MIRACLE WHIP, spinach and spicy chipotle peppers turns a classic dip into a game-changer.  Creamy Spinach and Artichoke Dip is a dip you can make in a snap and kick it up a notch with the unique, one-of-a-kind creamy blend of sweet, tangy and a little spicy!

Creamy Spinach and Artichoke Dip
 
Yields: 32 servings
Ingredients
  • 1 cup MIRACLE WHIP Dressing
  • 1 cup reduced fat sour cream
  • 1 can (14 ounces) artichoke hearts, drained and finely chopped
  • 1 package (9 ounces) frozen chopped spinach, drained and squeezed dry
  • ½ teaspoon garlic powder
  • 3 green onions, thinly sliced
  • 3 chipotle peppers in adobo sauce, chopped
Instructions
  1. Combine all of the ingredients in a large bowl and refrigerate for one hour (or until chilled) to overnight.
