Every year I say I’m going to make frozen fruit bars.  I bought a fancy pop mold and have a cookbook devoted to frozen pops, but we always end up buying frozen fruit bars from the grocery store.  That is until I discovered an easy recipe for frozen fruit bars made with only two ingredients and no fancy equipment required.  These Strawberry Greek Yogurt Pops are so easy to make, that my entire family (toddler included) can help!

Strawberry Greek Yogurt Pops are made with two simple ingredients – fruit preserves and non fat Greek yogurt.  I used strawberry, but you can easily use any flavor you like.  Put the ingredients in a resealable zip-top bag, mix it up, pour the mixture into small paper cups.  Add a wooden stick, put the pops in the freezer and in about two hours, you can enjoy your delicious, healthy Greek yogurt pops!

Strawberry Greek Yogurt Pops
 
Yields: 6 pops
Ingredients
  • ½ cup strawberry preserves (or any flavor)
  • 1½ cups non fat Greek yogurt
Instructions
  1. Put six 3-ounce paper cups on a plate. Get six wooden sticks and set aside.
  2. In a quart-size resealable zip-top bag, pour preserves and yogurt. Gently knead and squeeze the bag to mix the preserves and yogurt (just to create a swirl effect).
  3. Cut off a ½-inch corner from the bag and pipe into each cup.
  4. Put a wooden stick in the center of each cup. Place plate in freezer for at least 2 hours.
  5. To serve, simply peel paper cup from pop, and enjoy!
Notes
To evenly distribute the mixture into paper cups, I weighted the full bag on a food scale and divided by six. Then I piped the mixture into each cup up to that number, zeroing out the scale after each cup was filled.
