Every holiday, or any occasion really, Mike surprises me with truffles. He insists the truffles are for me and usually refuses when I offer to share.  With both Father’s Day and his birthday coming up, I wanted to make something to surprise him (early because, well…I know he reads the blog regularly.  Hi Honey!)  I have had a ‘healthified’ dark chocolate truffle recipe bookmarked for years, and this seemed like the perfect opportunity to make it.

They take minutes to prepare and then chill, shape, roll and then back to refrigerate until serving.  I rolled my truffles in cocoa powder and flaked coconut, but crushed cookies or finely ground nuts would also be an excellent coating.  This recipe uses both semisweet and bittersweet chocolate for a wonderful, deep chocolate flavor.

The original recipe calls for hazelnut liqueur, but since we have nut allergies in the house I needed to find a substitute.  One night when we were enjoying a favorite Pinot Noir wine, from Gallo Family Vineyards, I knew immediately the rich cherry and fruit flavors in this medium-bodied wine would be excellent in the dark chocolate truffles.  To me, wine and chocolate is one of those combinations that is deliciously complementary, like wine and cheese or coffee and chocolate.  Feel free to experiment with other favorite red wines in the recipe as well, such as Gallo Family Vineyards’ Café Zinfandel or Merlot.

Pinot Noir Dark Chocolate Truffles
 
Ingredients
  • 4 ounces semi-sweet chocolate, finely chopped
  • 4 ounces bittersweet chocolate, finely chopped
  • ½ cup half and half
  • 2 tablespoons Gallo Family Vineyards Pinot Noir wine
  • cocoa powder (for coating)
  • coconut (for coating)
  • finely chopped nuts (for coating)
Instructions
  1. In a small sauce pan over low heat, melt chocolate (slowly) until smooth.
  2. Remove from heat and stir in half and half and wine. Put in the refrigerator for at least 2 hours, or until firm enough to hold a ball shape.
  3. Put coating ingredients on a shallow bowl. (I used coconut and cocoa powder). Line a cookie sheet with parchment paper.
  4. Scoop out teaspoonful and gently roll into a ball and then roll in coating. Place on parchment paper and repeat with remaining truffle mixture. Refrigerate until ready to serve.
