Lately, I have been feeling more tired than usual and end up hungry in the late mornings. With intense morning workouts and spending long days caring for the kids, I am thinking it might be time to change up my breakfast routine and get a little more protein. My usual breakfast consists of oatmeal with cocoa powder, flax seed meal and a banana.
While I occasionally deviate to something with a little more protein, like Greek yogurt with berries or a smoothie, it always comes back to carb-heavy oatmeal. It’s quick to make, and I really like a hot breakfast. Thankfully this Spicy Black Bean Breakfast Burger has become the protein-packed solution to my breakfast woes.
This Spicy Black Bean Breakfast Burger is a healthy, meatless breakfast burger made with cheese, scrambled eggs (or egg whites) and a MorningStar Farms Spicy Black Bean Veggie Burger. It is quick and easy, packed with protein from the veggie burger, eggs and cheese… and it’s delicious! The flavorful seasoning is nicely balanced – spicy without being too hot, and it is perfect with the scrambled eggs and cheese. Sometimes I add salsa or use up whatever veggies we have on hand in the egg scramble. Other times I mix it up with another MorningStar Farms veggie burger flavor. Any of the varieties of burgers from MorningStar Farms work in this recipe, but the Spicy Black Bean is my favorite.
We always have MorningStar Farms veggie burgers on hand for a quick, healthy lunch or dinner, or to bring to barbecues. They are a good source of meatless protein and easy to cook on the grill, microwave or stove top. The burgers come in 12 different flavors, so there is a lot of variety to choose from. The Mediterranean Chickpea Burger tossed with some spinach, tomatoes, red onions and cheese is fabulous as a burger, a salad or a wrap. The Roasted Garlic and Quinoa Burger is another one of my go-to burgers for the grill.

- ½ whole wheat English muffin, toasted
- 1 MorningStar Farms Spicy Black Bean Veggie Burger
- 1 egg
- 2 egg whites
- Cooking spray
- Salt and pepper, to taste
- ¼ cup shredded cheddar cheese, plus additional for topping
- Topping ideas: chopped grape tomatoes, salsa, cheese
- Cook veggie burger according to package instructions.
- Meanwhile, in a small bowl, whisk the egg and egg whites until combined. Add salt and pepper, as desired. (Note: add in any other seasonings you may want in this step).
- Pour eggs into a nonstick skillet sprayed with cooking spray. Stirring occasionally, cook until the eggs are set.
- Put toasted English muffin half on plate. Top with shredded cheese, veggie burger, and cooked eggs. Sprinkle with chopped grape tomatoes and more cheese, if desired.

Ive tried them all!! I eat these DAILY! I started feeding my infant twins this as well! They LOVE the maple flavored breakfast sausages! My husband and I LOVE the Buffalo Chik patties! I like their Garden Veggie patties.
It’s been decades (late 70s) since I’ve had a Morning Star Farms product. I often make black bean burgers but it’s so time consuming so it’d be great to have a package or more of the Mediterranean Chickpea Burgers.
