Chocolate Picnic Cake is a simple chocolaty cake that is quick to make and perfect for a picnic or any gathering. It is light, fluffy and delicious!

After spending many months under several feet of snow, we finally got to enjoy some beautiful weather – 60s, sunny, perfect.  My kids have been so excited to go to playgrounds, blow bubbles, and play soccer and T-ball.

To celebrate, we thought it would be fun to plan a little picnic!  Seeing as no celebration is complete without cake, I quickly whipped together this Chocolate Picnic Cake for a special treat.

Chocolate Picnic Cake is an easy chocolate cake made using simple pantry ingredients.  The cake is topped with chocolate chips before baking, in lieu of frosting.  It is a perfect treat to enjoy while sitting outside in the sun. Each bite tastes just like what you would expect at a picnic – light, fluffy and chocolaty and a delicious complement to any standard picnic fare.

While the cake was cooling, we headed to Walmart to pick up the rest of our picnic essentials, which included a large waterproof blanket, a bottle of bubbles, watermelon and some Wet-Nap wipes for quick and easy clean up (using this coupon for $0.55 off any Wet-Nap product while supplies last – score!)

Chocolate Picnic Cake
 
Yields: 24 servings
Ingredients
  • 4 ounces unsweetened chocolate
  • 2½ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 eggs
  • 2 cups granulated sugar
  • 1½ cups cold water (or cold brewed coffee)
  • ⅔ cup oil
  • 2 cups semi-sweet chocolate chips
Instructions
  1. Preheat oven to 350°F. Spray a 13x9-inch baking pan with baking spray and set aside.
  2. Put chocolate in a microwavable bowl and microwave in 30 second increments, stirring in between, until melted. Set aside to cool.
  3. In a medium bowl, whisk flour, baking soda and salt.
  4. In a large bowl, add eggs, sugar, water, and oil and beat until combined. Gradually add flour mixture, beating on low, until combined. Stir in melted chocolate.
  5. Pour batter into prepared baking pan. Sprinkle chocolate chips over the top. Bake for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean. Move pan to a wire rack to cool completely.
