White Chocolate Peppermint Fudge #SundaySupper

White Chocolate Peppermint Fudge is a wonderful, festive fudge recipe that is super easy to make with no candy thermometer required!

Over the summer I found a fudge recipe that has now been sitting in my ‘to-make’ pile for months.  It’s for Pumpkin Pie Fudge, looks fabulous, but requires a candy thermometer.  Having to use a candy thermometer was just a little too high maintenance for what I had in mind, so the recipe sits.  Then I found a fudge recipe that requires no candy thermometer, and I was intrigued.  White Chocolate Peppermint Fudge that is super easy to make?  This could be wonderful (and dangerous!)

White Chocolate Peppermint Fudge starts with slowly melting the white chocolate, sweetened condensed milk and a little butter.  Next stir in flavoring and crushed candies.  Last, pour mixture into a baking pan, sprinkle with remaining crushed candies and chill until set.  Cut into squares and enjoy!  The peppermint candies add a lot of minty flavor to the fudge, but if you want a little extra, add some peppermint extract to the mixture.   The result is a delicious and festive White Chocolate Peppermint Fudge that couldn’t be any easier to make!

Yields: 36 squares
Ingredients
  • 18 ounces white chocolate chips
  • 1 can (14 ounces) sweetened condensed milk
  • ¼ cup unsalted butter, cut into pieces
  • 1 teaspoon peppermint or vanilla extract
  • 1 cup crushed peppermint candies, divided
Instructions
  1. Line a 8-inch baking pan with parchment paper, leaving 2 inches hanging over each side.
  2. In a double boiler (or a metal bowl placed over a sauce pan filled with water), place white chocolate chips, condensed milk and butter. Melt over low heat, stirring constantly. Remove from heat, add peppermint or vanilla extract and ½ cup crushed peppermint candies.
  3. Pour mixture into prepared pan and sprinkle remaining candies over the top.
  4. Chill in the refrigerator for at least 2 hours to overnight. Cut into small squares and serve!

The theme for Sunday Supper this week is recipes inspired by our favorite holiday music, movies and TV shows.  My favorite show is Rudolph, but all I could think of is Reindeer Snack Mix which I have already made and shared (and is wonderful by the way…).  So I decided to get creative with a song that became  ‘I’m Dreaming of a White {Chocolate} Christmas’   After trying this fudge, I will definitely be dreaming of a White Chocolate Peppermint Fudge Christmas all year long until next year!
