From busy weeknights to inexperienced cooks and everything in between, Quick and Easy Salsa Chicken is a simple yet tasty recipe that everybody needs to have in their recipe box.
Quick and Easy Salsa Chicken is a great choice for when you’re looking to make something fast that is healthy too. It can be made in less than 15 minutes, and this recipe is very hands off, just put everything in the pan and cook. Cutting the chicken into bite-size pieces inevitably speeds up the cooking process for the chicken. While I listed the measurements for what I used in the recipe below, this recipe is very flexible and these amounts are not strict. Just make sure the salsa covers your chicken and you’re good to go!
The original recipe suggests serving Quick and Easy Salsa Chicken with rice, but I used quinoa since that is what I had on hand. This recipe would be great in tacos or over a salad as well. These options are also quick and easy, resulting in a fast, delicious dinner.
In case you missed my post last Sunday, the Sunday Supper Movement partnered up with American Family Insurance in conjunction with their Back to the Family Dinner Campaign and the theme was meals with cheese. Now the theme for Weekday Supper this week is “Super Quick Meals” – Meals prepared in 15 minutes or less.
Weekday Supper is even more fun this week because we each got to choose a recipe that was submitted to the Back to the Dinner Campaign! I was immediately drawn to Quick and Easy Salsa Chicken recipe. Most salsa chicken recipes I find use a slow cooker, but since I don’t have a slow cooker, this stove top version is perfect. The fact that it is indeed quick and easy makes this recipe even better!
- Cooking spray
- 1 pound boneless, skinless chicken breast, but into bite-size pieces
- 1 to 1½ cups chunky salsa (enough to cover the chicken in the pan)
- 1 cup shredded cheddar cheese
- Heat a sauce over medium-high heat. Spray with cooking spray.
- Add chicken and quickly saute for 2 to 3 minutes, or until browned on both sides.
- Pour salsa over chicken, turn heat to high and bring to a boil.
- Cover pan, reduce heat to a low simmer and cook until chicken is cooked through (about 10 minutes).
- Serve with rice, quinoa, over a salad, in a tortilla, there are lots of options! Whatever you choose, be sure to top it with cheese!
