What do you get when you cross a brownie with a s’more? This easy recipe for S’mores Brownies!
As Labor Day marks the unofficial end of Summer, I am looking forward to cooler temperatures, Halloween (!) and, of course, lots of pumpkin recipes. While Fall baking is my absolute favorite, sometimes nothing hits the spot quite like a s’more. I have made several s’more-inspired recipes, including muffins, blondies, Golden Graham’s bars, even a cool and creamy pie! But these S’mores Brownies might be my favorite s’more-inspired treat. The chocolate brownie base is the perfect vehicle for all of the yummy s’more toppings, plus they take only minutes to prepare.
Now, I will let you in on a little secret. In this recipe, I used a box brownie mix. You can easily use your favorite brownie recipe if that is your preference, but I find sometimes in a pinch, a box mix is great to have on hand. Especially when, in just a few minutes, I can whip up the brownie mix, toss them in the oven and transform basic brownies into something spectacular. In this case, simply sprinkle the chopped graham crackers, chopped chocolate candy bars, and marshmallows over the baked brownies. Then pop the the pan in the oven again to let the topping melt and set. Last, turn on the broiler for a bit to toast the marshmallows. The result is delicious, gooey S’more Brownies! This recipe makes a generous amount, so these are great for a potluck or a holiday get-together – any time you need a quick and easy recipe that will surely be a crowd favorite.

- 1 box brownie mix (family-size for a 13"x9" pan)
- eggs, oil, water, etc. per brownie mix directions
- 4 graham crackers, broken into small pieces
- 2 cups miniature marshmallows
- 2 milk chocolate candy bars, roughly chopped into 1-inch pieces
- Preheat oven to 350* F. Spray a 13x9-inch pan with cooking spray and set aside.
- In a large bowl, stir together the batter for the brownie mix according to package directions.
- Bake for 15 minutes.
- Remove from oven and sprinkle graham crackers, marshmallows and chocolate candy bars over the top. Bake for an additional 15 to 20 minutes, or until a toothpick inserted in the center comes out clean.
- Broil for about 30 to 60 seconds, or until marshmallows start to brown. [Note: watch carefully because marshmallows and graham crackers can brown quickly!]
- Let cool and then cut into squares.
